- In this study the environmntal performances in gluten free industry were evaluated. it involved a case study from a leading company in the UK where real results provided by company were used for analysing. It was found that the main hotpots were ingredients, production and transportation. The environmntal burdens could be reduced by
increase in packaging recycling rate and use of local ingredients.
